Our annual When to Drink video series debuts this month, created to help those with Jordan Cabernet Sauvignon in their cellars learn how those wines are currently tasting and optimal drinking windows. Before you click play, I do want to share a few thoughts on the cellaring of Jordan wines.

Every bottle of Jordan Alexander Valley Cabernet Sauvignon carries with it a distinctive story of place and time. Each year, Rob Davis and his winemaking team craft a wine that best delivers this romantic tale. The wine inside is a true expression of the grape variety, the soils the vines are rooted in, the climatic conditions of the growing season, each decision made in the vineyards and winery, and of the many contributions of every individual involved throughout the process. While each vintage production story will remain unchanged in our history books, a new story begins when that bottle finds its way into your hands, and whether that wine is to be enjoyed immediately or to be celebrated after years of cellaring is completely up to the author of that story: you.

We do realize that preferences vary in regards to the characteristics of wines from young to mature. The question, “When should I open my bottle of Jordan Cabernet?” is one that many would like to have answered for them, as it is difficult to predict each vintages optimum cellaring time and drinking age. While taste preferences vary based on individual palates, we can help you make decisions on when to uncork older wines by providing a little background on each wine’s growing season and how it influenced its taste profile, the wine’s current color, aromas and flavors and a recommended aging timeline for optimal drinking based on our personal preferences.

Any wine worthy of aging requires balanced components of acidity, tannin structure and fruit expression. To quote André Tchelistcheff, the legendary winemaker who guided the Jordan’s original vision from vine to bottle, “Only wines of balance age.” An interesting thing about these balanced wines capable of cellaring, like the Jordan Cabernet Sauvignon, is that they are absolutely fabulous in their youth as well for exactly the same reason. With balance comes harmony, and with harmony comes elegance and finesse, regardless of age.
