Behind the Scenes

Winemaking Process Video: Tasting Wine from Vine to Fermentation Tank

Assistant Winemaker Maggie Kruse discusses the importance of tasting the grapes and juice throughout the harvest season in this winemaking process video. Grapes are first tasted during vineyard sampling to determine when to pick. Once grapes are harvested, only the highest quality fruit pressed into juice goes into stainless-steel tanks for fermentation. Young wines are tasted daily during fermentation to monitor heat, aromas and flavors. These daily tastings also prepare the winemakers for the Jordan Cabernet Sauvignon barrel blending session–an important part of the winemaking process for Jordan’s silky style of wine.
